99% of the turkeys sold in America are Broadbreased Whites, a fast-growing, commercially-developed breed that cannot fly or naturally mate. Heritage breeds are the original birds Americans used to consume before the advent of commercial breeding programs. This company sells all kinds of heritage meat and poultry, including turkeys, chickens, ducks and geese. Their American Bronze and Bourbon Red heritage turkey breeds are raised by fourth-generation Kansas poultry farmer Frank Reese and several neighboring farmers. The turkeys are given all day free-range access (but are not organic). Says New York Times food critic Marian Burros, "Tasting the four heritage turkeys against two Broadbreasted Whites, one of which was free range, reminded me why the Thanksgiving turkey was so eagerly looked forward to 50 years ago, and why, today, cooks have had to dream up dozens of ways of making it taste better.
