Petrossian Paris
"When it comes to caviar, Petrossian is the mother ship," says the New York Times. Back in the 1920s, the Petrossian brothers, Melkoum and Mouchegh, introduced Europe to the world of fine caviar. Now Petrossian is one of the largest exporters of caviar in the world.

Russ & Daughters - Though most famous for its smoked salmon, which Marian Burros of the New York Times has called "perfection," this 90+ year old family-run shop on Manhattan's Lower East Side also stocks some of the city's best caviar (Iranian and domestic).

Sterling Caviar - Many consider this to be the best American made caviar, which some say compares favorably to Caspian Sea osetra. It's harvested from White Sturgeon which are farm-raised in Northern California by a company called Sea Stolt Farms. This caviar is also sold by Petrossian under its own label.

Tsar Nicoulai - After Stolt Sea Farm caviar (which is sold under the Sterling Caviar and Petrossian labels), San Francisco-based Tsar Nicoulai is the only other domestic caviar producer you need to know. Celebrity chefs Wolfgang Puck, Charlie Trotter and others have praised their California Estate Osetra.

Sunburst Trout - Only the roe (fish eggs) of sturgeon can be called caviar. Eggs from any other species, such as salmon or trout, are known as roe. This North Carolina company has been widely praised for its rainbow trout roe.
